parsnip fries

An unfamiliar vegetable and a failed experiment: Parsnips


So I attempted parsnip fries. Turns out you really do have to make sure you cut out all of the bitter core. I got most of it, but not nearly as much as I should have. They turned out rather acidic. Other than that they were good though. An awful lot of careful cutting goes into making them fries, but the rest of the process was just seasoning and baking. Quite easy.


I don't know if I'll try making parsnips into fries again...I'd rather put the work into butternut squash again or maybe carrots...vegetables I know I'll like when they're finished cooking. I do think I'll try using parsnips again though. They're a fascinating vegetable.
