rainbow chop salad


With a last-minute invitation to head to someone's house for dinner and an assignment to make salad, my mother and I opened the fridge and started pulling out potential ingredients. We had everything but lettuce. Not to be deterred, we simply started chopping up broccoli, bell peppers, radishes, cucumbers, and more...everything we could get our hands on. The result was lovely and delicious.


For dressing we put a dash of this and a sprinkle of that. I put a dash of red wine vinegar over the top, drizzled lemon olive oil next, sprinkled herbes de provence, and crumbled over some cotija cheese. Then a toss around and repeat until all of the vegetables were evenly coated. Even folks who aren't very big fans of vegetables enjoyed it.
