Because sometimes you just need something sweet and nostalgic.
Cinnamon Rolls
Modified from The Urban Poser
makes about twelve rolls
preheat oven to 350 F
3 c almond flour
1/2 t salt
1/4 baking soda
combine and set aside
1/4 c melted coconut oil
2 T honey
2 room temperature eggs
beat together gently
add wet to dry
knead into a smooth dough, mixing until firm
for ease of shaping, you can cool it in the fridge for ten minutes
lay out a piece of parchment paper, wax paper, or plastic wrap
lightly grease with coconut oil
place dough onto the greased surface and smooth into a rectangle
make as uniform as possible at about 1/8 inch thick
1/4 c honey/maple syrup
drizzle evenly over the dough and spread with fingers to cover the whole surface
1/2 c ground walnuts/pecans
1/2 c raisins
1/2 T ground cinnamon
sprinkle evenly over dough
roll the long edge away from you until you have a log
if the roll cracks, simply use the warmth of your hand to press it together again
cut into thick slices
chill if you need smoother cutting
lay them cut side down in a glass pan or lined cookie sheet
bake 10-15 minutes or until slightly browned around the edges
beware of burning
cool 10 minutes without touching them
drizzle honey, butter, or frosting over them just before serving
