Breakfasts are a little tricky. Not having a last-minute cereal and milk option makes things a little trickier. Yogurt works well, and green smoothies are simply glorious. However, most days I need something with a little more stick so I can make it to lunch. Enter homemade sausage, which I actually like better than store-bought ones.
I have yet to experiment with them (I'm thinking apple cinnamon goodness), but these simple ones are just right for now.
BREAKFAST SAUSAGE
recipe modified from "Paleo Cooking from Elana's Pantry" by Elana Amsterdam
Makes 8 patties
1 1/2 lbs ground turkey
2 1/2 t Herbs de Provence
1 T honey
1 1/2 t sea salt
1 t fresh ground black pepper
Combine in a large bowl, using your hands to mix thoroughly.
Roll into patties, wrap, and freeze.
When you want to cook them...
1 T olive oil
Heat in a large skillet over medium-low heat.
Cook the patties until golden brown and crispy.
