crock pot chicken leading to carrot apple soup


The weather turned cool.  We could feel it in the breeze.  I needed spicy soup and a bowl of warm chicken.  This very easy recipe handily met both requirements with very little effort on my part.


CROCK POT CHICKEN LEADING TO CARROT APPLE SOUP
recipe modified from Frosted Fingers 


4 t salt 
3 t paprika 
4 sprigs fresh rosemary 
1 1/2 t black pepper 

Mix together in a bowl. Set aside. 

1 c chopped onion 
4-5 carrots, scrubbed, chopped in bite-sized pieces
2 garlic cloves, minced 
1 apple, sliced 

Place in the bottom of the crock pot. 

1 whole chicken 

Remove giblets and rub down with the reserved spices. 
Place on top of veggies. 
Put in crock pot and cook on low 4-8 hours 
Remove chicken and use as desired.

Cooked vegetables
Broth
1/2 qt water

Using caution, place into a blender or processor and blend until smooth.
Serve immediately or save up to 1 week in an airtight container in the fridge.
Garnish with sharp cheddar cheese, chicken, and chopped green onion.
