With a late class on Mondays and Wednesdays, I arrive home just before I become desperate for some dinner. This has often led to my eating leftovers and finding myself strapped for what to eat for lunch the next day. BUT! All is not lost as I have slowly been able to build up a repertoire of fast yet yummy food, these salmon cakes from Comfy Tummy being my new favorite.
With some green beans I'd snagged from the store the previous week cooked with a few cloves of minced garlic and olive oil, I had one of the salmon patties for dinner that night. I was going to save some of the green beans for my next meal but that did not happen...but I did manage to save the other salmon cake for lunch the next day. It took some will power though...they're quite delicious.
SCD SALMON CAKES
recipe modified from Comfy Tummy
makes 2 cakes
1 can salmon (6 oz)
1 egg 1 T almond flour
3 T minced green or yellow onion
salt and pepper to taste
Combine in a bowl.
Shape into patties.
2 T olive/coconut oil
Heat over medium heat.
Fry patties until golden brown.
Flip and fry the other side until golden brown.
Serve.
